Job Description:
Position Summary:The Director of Design & Project Management,
under direction of the Senior Director of Design and Construction
is accountable for the design brand management understanding the
operational activities and flow, equipment and other business needs
in creating a brand book and mock prototype. In addition to Design
Management for all concepts, this position is responsible for
support on Benihana and RA Sushi construction projects including
new restaurant construction, remodeling, refresh projects, building
expansions and all other assigned projects or initiatives with the
operating company restaurants. Will be the key driver in creating
brand books and will be responsible for overseeing the design of
projects to each brand standards. The position will also involve
all components of development including due diligence, preliminary
design, budgeting, scheduling and reconciliation of all budgets for
each project. Key Customers include outside of the Development Team
include the Benihana guest, the entire operational team from the
General Managers to the VP of Operations, the COO and CEO.Essential
Functions and Responsibilities:
- Work with Sr. Director, Marketing and Ops to creates and
maintains brand standards
- Completes Due Diligence on proposed projects to help determine
the design, timeline and budget and prepare a project approval
package
- Provide preliminary design drawings (or manage outsource design
as needed) for all new projects
- Ensures quality control standards for construction (e.g., cost,
timing and site layouts)
- Work with Sr. Director to maintain Design Brand Books and mock
prototypes for both brands
- Monitors and controls the development process by coordinating
the efforts of others (e.g., architects, expediters, consultants,
contractors, vendors and attorneys, consultants, government
agencies).
- Negotiates terms and conditions of Design, Project Management
and Construction contracts to follow company standards
- Works with Consultants to secure all required equipment and
owner provided materials
- Direct cost engineering for all proposed projects
- Embraces the Team approach between development team and outside
departments and help manage the overall development schedule
- Execute or manage outside resources to execute the permitting
process to avoid unnecessary delays.
- Develops and utilizes a network of contractors and other
outside vendors
- Maintains working relationships resources for vendors to
support overall company goalsSkills/Knowledge:Excellent verbal and
written communication skills. Ability to read and interpret
documents such as; construction documents, Design guidelines,
safety rules, operating and maintenance instructions and procedure
manuals. Ability to add, subtract multiply and divide in all units
of measure, using whole numbers, common fractions and decimals.
Ability to compute rate, ratio and percent and to draw and
interpret bar graphs.Design Drafting in AutoCAD. Excellent
Microsoft Suite computer skills required, with and extra emphasis
on Excel with an ability to manage numbers, budgets and reporting
these items a must. (Word, Excel, PowerPoint, Project, Outlook
etc.) Ability to use third party web based software, for project
and facility management. Service Channel, Blubeam revu experience a
plus. Ability to communicate and explain complicated details
through the phone or sketches also a
plus.Education/Experience:Bachelor's degree in Architecture,
Engineering or Construction Management, a related field preferred.
Minimum of ten (10) years' experience in restaurant operations,
construction, facility maintenance or a combination of these areas
accepted and preferred. Equivalent combination of education and
experience may also be considered.Supervisory

General office environment. Lighting and temperature are adequate,
and there are no hazardous or unpleasant conditions caused by
noise, dust, etc. Work is generally performed within an office
environment, with standard office equipment available. The noise
level in the work environment is usually moderate. Travel
Requirements: 40% travel required with overnight stays. Physical
Requirements: Work is generally sedentary in nature, exerting up to
25 pounds of force occasionally to lift, carry, push, pull, or
otherwise move objects, including human body. Walking and standing
but may be required, up to 15% of the time. To perform this job
successfully, an individual must be able to perform each essential
