Job Description We are seeking a Sous Chef at our MIA unit to supporting food preparation to airline specification, Airline presentations and training in collaboration with the Executive Chef. Essential Functions --- Responsible for all facets of daily hot food production including ensuring product is made timely, to the specifications of the airlines--- Must be able to maintain a level head, delegate and verify cooks are doing work assigned--- Hold each cook responsible for their HACCP logs--- Work with airlines and retails on time products are needed--- Prepare daily requisitions for storeroom.--- Auditing meal produced to check for the correct weights and presentation--- Ensure we are making/using the correct amount of product reducing waste--- Hold daily briefing and verify personal hygiene and food handling procedures are followed.--- Manage employee schedules, attendance, and disciplinary process--- Determine new hire training log--- Do menu reviews with the team whenever a change is taking place, have tastings--- Respond to e-mail promptly--- Be audit ready for USDA, FDA Media or airline's--- Assist in maintaining a good relationship between the departments.--- Other duties as assigned by Management Skills and Qualifications 5 years Cook experience with a minimum of 2 years as a Lead Cook in a high-volume cooking institution/airline catering Prior experience with HACCP required Self-motivated and exhibit an aptitude for leading, coaching and driving for excellence Must have knowledge of GMP's Experience with multi-airlines (international customers preferred) but not necessary.
